This week we created a vegan friend rice featuring our Peanut Teriyaki Jerky!
This is a perfect recipe to make a big batch of and save left overs for meals throughout the week! It’s also easily adaptable… add any of your favourite veggies or try our Sriracha Jerky instead!

Ingredients:
- 1 cup rice, cooked according to package directions
- 2 tbsp olive oil
- 1/2 block of tofu (~200g)
- 1/4 tsp ground turmeric
- 2 tbsp soy sauce
- 1/2 white onion, diced
- 2 garlic cloves, minced
- 1/2 cup mushrooms, sliced
- 1 large carrots, peeled and sliced
- 1 stalk of celery, diced
- 1/2 cup canned peas
- 1/2 cup Peanut Teriyaki Jerky
- 1 tsp sriracha
- Green onion for garnish
What to do:

Begin by cooking the rice.

While the rice is cooking, prepare the tofu by pressing it, then place it in a small bowl and mashed it until it looks "crumbly".

Add the turmeric and 1 tbsp of soy sauce to the tofu and mix until well combined. Set aside.

Prepare the vegetables then heat the olive oil in a large pan on high.

Add the onion, garlic and mushrooms and cook until the onion starts to become translucent.

Add the tofu, carrot, celery, and peas and cook for about 7-10 minutes, stirring often.

Add the jerky, the remaining soy sauce and the sriracha and cook for another 2-3 minutes.

Serve hot with green onion on top if desired and enjoy!
