Vegan Fried Rice w/ Peanut Teriyaki

This week we created a vegan friend rice featuring our Peanut Teriyaki Jerky!

This is a perfect recipe to make a big batch of and save left overs for meals throughout the week! It’s also easily adaptable… add any of your favourite veggies or try our Sriracha Jerky instead!

Ingredients:

  • 1 cup rice, cooked according to package directions
  • 2 tbsp olive oil
  • 1/2 block of tofu (~200g)
  • 1/4 tsp ground turmeric
  • 2 tbsp soy sauce
  • 1/2 white onion, diced
  • 2 garlic cloves, minced
  • 1/2 cup mushrooms, sliced
  • 1 large carrots, peeled and sliced
  • 1 stalk of celery, diced
  • 1/2 cup canned peas
  • 1/2 cup Peanut Teriyaki Jerky
  • 1 tsp sriracha
  • Green onion for garnish

 

What to do:

  1. Begin by cooking the rice.

  2. While the rice is cooking, prepare the tofu by pressing it, then place it in a small bowl and mashed it until it looks "crumbly".

  3. Add the turmeric and 1 tbsp of soy sauce to the tofu and mix until well combined. Set aside.

  4. Prepare the vegetables then heat the olive oil in a large pan on high.

  5. Add the onion, garlic and mushrooms and cook until the onion starts to become translucent.

  6. Add the tofu, carrot, celery, and peas and cook for about 7-10 minutes, stirring often.

  7. Add the jerky, the remaining soy sauce and the sriracha and cook for another 2-3 minutes.

  8. Serve hot with green onion on top if desired and enjoy!
