Tofu Scramble w/ Plant Power Original Jerky

This week we created a delicious variation of tofu scramble including our Original Vegan Jerky.

This recipe is super simple and adaptable, and makes about 2-3 servings! Perfect for breakfast or lunch!

Ingredients:

  • 1 firm or extra firm block of tofu
  • 1 Tbsp olive oil
  • 1/4 medium onion, diced
  • 1-2 cloves of garlic, minced
  • 1/2 cup mushrooms, sliced
  • 1/2 cup broccoli, cut into bite size florets
  • 1/4 tsp turmeric
  • 1/4 tsp smoked paprika or 1/2 tsp chili powder
  • 3 Tbsp nutritional yeast
  • 1/2 tsp garlic salt or powder
  • Salt & black pepper, to taste
  • 1/4 cup Original Plant Power Jerky, chopped
  • Handful of spinach

 

Instructions:

  1. Drain, cut, and press the tofu then add it to a medium bowl and mash it with a fork until it has a "scrambled egg-like" look. Set aside.
  2. Heat the olive oil in a medium pan, then add the garlic, onions and mushrooms, cook until lightly browned and slightly softened.
  3. Add the broccoli and continue cooking on medium-high heat, for about 3-4 minutes.
  4. While the veggies are cooking, add the turmeric, smoked paprika or chili powder, nutritional yeast, garlic salt, pepper, and jerky to the tofu and mix well until all the spices have combined evenly with the tofu.
  5. Add the tofu mix to the veggies and cook for about 5-6 minutes, stirring frequently.
  6. Add the handful of spinach and combine well with the rest of the mixture and cook for about 1-2 more minutes.
  7. Serve hot and enjoy!
