This recipe is also amazing if you have any veggies in your fridge that need to be used up! Swap out the ones we have listed here for your favourites, or add in any extras that you’d like!

Ingredients:
Teriyaki Sauce:
- 1/4 cup low-sodium vegetable broth
- 1/4 cup low-sodium soy sauce (or tamari)
- 2 Tbs rice vinegar
- 2 Tbs maple syrup
- 1 Tbs minced garlic
- 1 Tbs minced ginger
- 1 Tbs corn starch
Stir Fry:
- 2 tbsp Olive oil
- 2 cups sliced Mushrooms
- 2 cups Broccoli, cut into bite size pieces
- 1 large carrot, peeled and sliced
- 1/2 cup Peanut Teriyaki jerky, chopped
- Handful of spinach
- Green onion for garnish
What to do:
- Prepare all the vegetables.
- In a large pan, heat the olive oil then add the mushrooms. Cook until they’ve started to release moisture, ~2-3 minutes
- Add the broccoli and carrots and cook for about 5-7 minutes.
- In the meantime, whisk together all the sauce ingredients in a small bowl until everything is combined, set aside.
- Add the Peanut Teriyaki jerky and the sauce to the pan and combine and cook for about 2-3 more minutes.
- Add in the spinach and cook until it has wilted.
- Continue stirring until the sauce has thickened and the veggies are cooked to your preference.
- Serve over your favorite rice and enjoy!
