Roasted Cauliflower w/ Original Plant-Based Jerky

We love an easy, satisfying veggie recipe! And we love adding our plant-based jerky to them for a little extra protein. This recipe has minimal ingredients and is super easy to whip up for a quick + healthy dinner, or for when you’re having company over!

This recipe is the perfect side dish addition to any meal that both vegans and non-vegans can easily enjoy!

 

Ingredients:

1 head of cauliflower, cut into bite size florets

2 tbsp olive oil

1 tsp parsley

1/4 cup vegan parmesan* OR nutritional yeast

1/2 cup Original Jerky, chopped

 

What to do:

  1. Pre heat the oven to 425 F and prepare your cauliflower.

  2. In a large bowl, toss the cauliflower in the olive oil, parsley and vegan parmesan or nutritional yeast.

  3. Spread evenly on a baking sheet and sprinkle the jerky bits on top.

  4. Bake for 25 min, flipping half way.

  5. Serve hot as a side dish. Enjoy!

 

*Vegan Parmesan:

1 cup cashews

1/4 cup nutritional yeast

1/2 tsp garlic powder

3/4 tsp salt

 

Blend everything in a food processor until it reaches a fine consistency.
