Curried Broccoli Salad w/ Southwest Jerky

This Curried Broccoli salad has a hearty addition of our limited edition Peg City Vegan Jerky (but Southwest would add a nice flavour too!). It’s perfect to prep at the beginning of the week and to enjoy for quick, healthy lunches or dinners throughout the week.

Here’s how to do it👇🏼

What you need:

For the Salad:

  • 1 head of broccoli, chopped into bite size pieces
  • 1 cup shredded carrots
  • 1 cup finely chopped Plant Power Southwest Jerky, or flavour of your choice
  • 1/2 cup sliced almonds
  • 1/2 cup dried cranberries
  • 1 bunch green onions, chopped
  • 1/4 cup dried parsley
For the dressing:
  • 1/4 cup tahini
  • 1/2 large lemon, juiced
  • 3-5 tablespoons warm water
  • 1 clove garlic finely minced
  • 1-2 tsp maple syrup
  • 1 tsp yellow curry powder
  • 1/2 Tbsp ginger powder
  • 1/2 tsp ground turmeric
  • 1/2 tsp salt
  • Freshly ground black pepper

 

What to do:

  1. Prep and combine all the salad ingredients in a large bowl.
  2. Whisk together all the dressing ingredients in a small bowl until smooth and immediately pour over the salad.
  3. Toss the salad until the dressing and salad are combined.
  4. Enjoy!
