This Curried Broccoli salad has a hearty addition of our limited edition Peg City Vegan Jerky (but Southwest would add a nice flavour too!). It’s perfect to prep at the beginning of the week and to enjoy for quick, healthy lunches or dinners throughout the week.
Here’s how to do it👇🏼
What you need:
For the Salad:
- 1 head of broccoli, chopped into bite size pieces
- 1 cup shredded carrots
- 1 cup finely chopped Plant Power Southwest Jerky, or flavour of your choice
- 1/2 cup sliced almonds
- 1/2 cup dried cranberries
- 1 bunch green onions, chopped
- 1/4 cup dried parsley
- 1/4 cup tahini
- 1/2 large lemon, juiced
- 3-5 tablespoons warm water
- 1 clove garlic finely minced
- 1-2 tsp maple syrup
- 1 tsp yellow curry powder
- 1/2 Tbsp ginger powder
- 1/2 tsp ground turmeric
- 1/2 tsp salt
- Freshly ground black pepper
What to do:
- Prep and combine all the salad ingredients in a large bowl.
- Whisk together all the dressing ingredients in a small bowl until smooth and immediately pour over the salad.
- Toss the salad until the dressing and salad are combined.
- Enjoy!
